Cozy Up with a Hearty Beef and Bean Casserole

As the days grow shorter and the air turns crisp, there's nothing quite like a warm and comforting casserole to chase away the chills. This Beef and Bean Casserole is a family favorite, packed with flavor and guaranteed to satisfy even the heartiest appetites. It's a simple dish to prepare, making it perfect for busy weeknights or lazy weekends.

This recipe is inspired by my grandmother, who always had a pot of something simmering on the stove. Her casseroles were legendary, and this one is a tribute to her culinary magic. I've added a few of my own touches, but the heart of the recipe remains the same: simple, wholesome ingredients combined to create a dish that's greater than the sum of its parts.

Let's Get Cooking!

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped (optional)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can diced tomatoes and green chilies (like Rotel), undrained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (or your favorite cheese)

Instructions:

  1. Brown the beef: In a large skillet over medium heat, brown the ground beef. Drain off any excess grease.
  2. Sauté the veggies: Add the onion, garlic, and bell pepper (if using) to the skillet and cook until softened, about 5 minutes.
  3. Combine the ingredients: Stir in the black beans, kidney beans, diced tomatoes, tomatoes and green chilies, chili powder, cumin, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
  4. Bake: Pour the mixture into a greased 9x13 inch baking dish. Top with shredded cheese.
  5. Bake and serve: Bake in a preheated 350°F (175°C) oven for 20-25 minutes, or until the cheese is melted and bubbly.

Tips and Variations:

  • Spice it up: Add a pinch of cayenne pepper or a chopped jalapeño for extra heat.
  • Make it vegetarian: Substitute the ground beef with 2 cups of cooked lentils or your favorite plant-based ground meat.
  • Add some veggies: Feel free to add other vegetables like corn, zucchini, or carrots.
  • Top it off: Garnish with sour cream, chopped cilantro, or avocado slices before serving.
