Sonofabitch Stew (also known as "Cowboy Stew")  

This is a hearty, filling stew that could be made with whatever was on hand, often including tougher cuts of meat and root vegetables.   Ingredients: 1 pound beef or venison, cut into cubes 1 onion, chopped 2 carrots, chopped 2 potatoes, peeled and cubed 1 cup dried beans (soaked overnight) 4 cups beef broth Salt and pepper to taste Instructions: Brown the meat in a large pot over medium heat. Add the onion, carrots, potatoes, beans, and broth. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the meat is tender. Season with salt and pepper to taste. 2. Hardtack This simple, long-lasting bread was a staple for travelers and soldiers on the frontier.   Ingredients: 3 cups flour 1 teaspoon salt 1 cup water Instructions: Combine flour and salt in a bowl. Gradually add water, mixing until a dough forms. Knead the dough for a few minutes. Roll out the dough to about 1/2-inch thickness. Cut into squares or rectangles.   Prick each piece several times with a fork.   Bake at 375°F for 30-40 minutes, or until golden brown and hard.
